Easy and quick soup recipes made with seasonal autumn ingredients

In autumn, when the mornings and evenings get colder, ``soup with lots of ingredients’’ will gradually warm your tired body from the core. Ingredients that are in season in autumn (mushrooms, root vegetables, pumpkins, etc.) are rich in dietary fiber, vitamins, and minerals, and are perfect for immune care during the change of seasons, when summer fatigue tends to drag on. Here are three time-saving soup recipes that can be made in just 10 minutes after returning home, even on busy weekdays, with minimal use of knives and pots.

Recipe 1: Three mushroom and ginger sleet soup (working time: 8 minutes)

  • Ingredients (for 2 people): Shimeji mushrooms, Maitake mushrooms, Enoki mushrooms (1/2 pack each), grated radish (4 tablespoons), grated ginger (1 teaspoon), white dashi (2 tablespoons), water (400ml), chopped green onions
  • How to make: Put water and white soup stock in a pot, bring to a boil, and add the mushrooms, which have been chopped off and loosened by hand, all at once. Cook over medium heat for 3 minutes until the flavor of the mushrooms melts, then add ginger and grated radish, bring to a boil, and sprinkle with green onions.
  • Time-saving tip: By tearing the mushrooms by hand instead of using a knife, the surface area increases and the stock oozes out in a short time. The gingerol in ginger promotes blood circulation, and your body will feel warm immediately after drinking it.

Recipe 2: Complete in the microwave! Pumpkin rich soy milk potage (working time: 7 minutes)

  • Ingredients (for 2 people): Frozen pumpkin (150g), onion (1/4 piece), unadjusted soy milk (200ml), consommé granules (1 teaspoon), butter (5g), black pepper
  • Directions: Place thinly sliced onions and frozen pumpkin in a heat-resistant bowl, cover with plastic wrap, and heat in the microwave (600W) for 4 minutes. Mash the pumpkin into a paste with the back of a fork, add the soy milk, consommé, and butter, mix, and microwave again for 1 minute and 30 seconds. Finish by sprinkling with black pepper.
  • Time-saving tips: Skip the troublesome peeling and tough cutting work by using commercially available frozen cut pumpkins. You can easily smooth it out with a fork without using a mixer.

Recipe 3: Side dish pork soup with sweet potato and pork belly (working time: 10 minutes)

  • Ingredients (for 2 people): Thinly sliced pork belly (80g), sweet potato (1 small), green onion (1/2), sesame oil (1 tsp), miso (1.5 tbsp), Japanese-style dashi stock (1 tsp), water (400ml)
  • How to make: Cut the sweet potato into 1cm wide half moons, soak in water for 1 minute, then heat in the microwave for 2 minutes in a heat-resistant dish. Heat sesame oil in a pan and stir-fry the pork and green onions cut into bite-sized pieces. When the color changes, add water, dashi, and sweet potato, and simmer for 3 minutes to dissolve the miso.
  • Time-saving tips: By pre-heating root vegetables that are difficult to cook in the microwave, you can shorten the simmering time to 1/3 of the normal time. With the protein from the pork and the natural sweetness of the sweet potato, this is a very satisfying bowl that can be used as a main dish.
